Brilio.net - Rujak cingur is one of Surabaya's typical foods which would be a shame if you just missed it. It's different from usual rujak, because rujak cingur uses peanut sauce mixed with petis spices. The following is a recipe for typical Surabaya rujak cingur which is delicious and has kicking spices , reported by BrilioFood from the Instagram account @byviszaj.

Material:
- 2 bunches of kale
- Beef minced, boiled, cut into pieces
- Bean sprouts
- Long beans
- Jicama
- Cucumber
- Kedondong
- Pineapple
- Fried tofu, cut
- Fried tempeh, cut

Spice:
- 4-5 tbsp fried peanuts
- 5 cayenne peppers or according to taste
- 3 garlic, sliced and fried
- 2 tablespoons combed brown sugar
- 2 tbsp petis
- 1/2 tsp shrimp paste
- Tamarind
- Salt
- Enough water

How to make:
1. Wash vegetables and fruit until clean. Boil kale, long beans and bean sprouts, drain. Cut the fruit, set aside.
2. Grind the cayenne pepper, fried garlic, salt and shrimp paste until smooth. Add brown sugar, petis and tamarind, then grind until smooth.
3. Add the fried peanuts, grind until smooth and even, adding water little by little until the seasoning is the right consistency, check the taste.
4. Serving: Arrange vegetables, fruit, fried tofu, fried tempeh, and cingur on a plate. Drizzle with rujak seasoning. Complete with white crackers.
