Material:
- 750 gr chicken, cut into small pieces
- 5 green tomatoes, sliced
- A handful of whole cayenne pepper
- 2 large red chilies, cut obliquely
- 2 large green chilies, cut obliquely
- Banana leaves for wrapping
Iris seasoning:
- 5 cloves of garlic
- 8 cloves of red onion
- 2 cm ginger, crushed
- 3 cm galangal, crushed
- 2 stalks of lemongrass, crushed
- 2 lime leaves
- 5 bay leaves
Other spices:
- 50 gr fibercreme
- Sugar, salt, pepper, stock powder to taste
How to make:
1. Saute all the sliced spices until fragrant and crispy, add enough water
2. Add fibercreme or thick coconut milk, sliced chilies, and whole cayenne peppers
3. Season with sugar, salt, pepper, stock powder, adjust the taste.
4. Turn off the heat, add the chicken and chopped tomatoes or starfruit.
5. Prepare banana leaves, put a wide piece of plastic on top then cover or stack them again with banana leaves, then add the chicken and the sauce.
6. Wrap to form a tum, do this until the dough is finished.
7. Steam for 20-30 minutes. Garang asem chicken is ready to be served.
