Material:
- 1/2 free-range chicken
- 1 liter of water
- 2 carrots
- 50 gr ear mushrooms
- 50 gr vermicelli
- 2 star anise
- 3 cloves
- 2 cm cinnamon
Ground sauce spices:
- 7 red onions
- 5 garlic
- 1/2 nutmeg
- 2 cm ginger
- 1 tsp ground pepper
- 1 tsp mushroom stock
- 1 tsp salt
Ingredient 2:
- 3 pairs of liver and gizzards, boiled
- 3 boiled eggs
- 2 bay leaves
- 2 tablespoons soy sauce
- 2 tablespoons tamarind water
- Salt to taste
- Enough water
Ground spices:
- 5 red onions
- 3 garlic
- 1 tablespoon Javanese sugar
- 1/2 tsp pepper
- 1/2 tsp mushroom stock
- 1/2 tsp salt
How to make:
1. Boil the chicken, remove the foam on top. Add 2 tsp salt and boil until the chicken is tender. Remove the chicken, set aside the broth.
2. Once the chicken has cooled, shred the chicken.
3. For the sauce, saute the ground spices until fragrant, add them to the chicken stock, add star anise, cinnamon and cloves.
4. Let it boil, cook over low heat. Taste correction. Turn off the heat.
5. Boil carrots and ear mushrooms until cooked. Lift, drain.
6. For soy sauce eggs, saute ground spices, add soy sauce, add eggs and gizzard liver, boil.
7. Add enough water, add tamarind water and cook until reduced.
