While soaking the eggplant, you can prepare the flour and seasoning mixture. Prepare two bowls, one filled with the seasoning flour mixture, while the other is filled with the seasoning solution water. You can use seasonings such as garlic, powdered broth, salt, pepper, and coriander.
After soaking the eggplant in salt water for 15 minutes, remove and rinse thoroughly. Then, dip the eggplant in the seasoned water, then dip it in the seasoned flour. Do this process one more time so that the fried eggplant will be crispier.
