Eggplant is a versatile ingredient that can be processed into various delicious dishes. From traditional dishes such as eggplant balado to international dishes such as eggplant parmesan, eggplant always manages to captivate the taste buds of its connoisseurs. The uniqueness of its texture and ability to absorb spices make eggplant a favorite ingredient in the kitchen.
However, behind these advantages, processing eggplant is often a challenge. Especially if the cooking technique uses the frying method. One of the main problems is that eggplant tends to absorb a lot of oil when fried, so the end result can be too oily and unhealthy. This is due to the spongy structure of eggplant flesh that easily absorbs liquid.
This problem often makes many people hesitate to fry eggplant , even though it tastes very good. To overcome this challenge, various cooking techniques can be applied so that eggplant does not absorb too much oil. One effective way is to coat eggplant with flour. This flour layer is considered to be able to protect the pores on the surface of the eggplant, thus minimizing oil absorption when fried.
But if you don't like using flour, there is another trick that can be applied. This trick was once done by Instagram user @ummubalqishaura. Through one of the videos uploaded, she admitted that she could fry eggplant so that it didn't absorb much oil even though she didn't use flour.
As reported by BrilioFood from Instagram @ummubalqishaura on Tuesday (1/10), the method used is to use only 2 tablespoons of cooking oil. To be more precise, prepare the eggplant first. Then soak it in salt water to help reduce oil absorption. After that, drain it.
If so, prepare a teflon or non-stick pan. Then pour 2 tablespoons of oil, spread it using a brush or eggplant to be fried. Next, arrange the eggplant on the pan until full.
