Brilio.net - Free-range chicken is known to have a more savory taste and distinctive aroma compared to broiler chicken. The denser texture of the meat and the rich natural flavors make free-range chicken often the main choice in various traditional dishes, such as opor, soto, and grilled chicken. In addition, free-range chicken is considered healthier because it is raised naturally with more diverse feed, resulting in meat that is lower in fat but rich in protein.
However, the main challenge in processing kampung chicken is its texture which tends to be tougher than broiler chicken. Because it grows naturally with higher physical activity, the muscle fibers in kampung chicken become stronger and require a longer cooking time for the meat to become tender. If not cooked with the right technique, kampung chicken can taste tough and less delicious when eaten.
To overcome this problem, a special cooking method is needed, such as using a pressure cooker, or adding natural tenderizers such as papaya leaves or pineapple. Even if the free-range chicken is to be cooked by frying, the meat must still be boiled first with a pressure cooker to make it more tender and soft.
But besides boiling with a pressure cooker, you can use another method when making fried kampung chicken so that the results are more tender and savory. A YouTube user AZA KITCHEN once revealed it further through one of the uploaded videos. He admitted to using a simpler way to make fried chicken tender and the spices are perfectly absorbed.

As reported by BrilioFood from YouTube AZA KITCHEN on Wednesday (22/1), chicken that is going to be fried must be marinated first. The method is quite easy, put the cut-up kampung chicken into a wide pan or frying pan. Then add chopped garlic and chicken marinade seasoning. You can use instant marinade seasoning or mix it yourself with traditional spices.

After that, add water until all parts of the chicken are completely submerged. If so, stir until all the spices are dissolved. Then cover the pan and boil using medium heat until the water recedes.

When the water recedes, the chicken meat will become more tender, you know. Now, take the chicken meat and fry it directly in a pan filled with hot oil. No need to fry it for too long, just fry it briefly until the surface becomes crispy. After that, remove and drain. That way, the soft and tender kampung fried chicken is ready to be consumed.
Having been watched more than 45 thousand times, this video about the trick of frying kampung chicken has immediately attracted the attention of netizens.
