Brilio.net - Indonesia has many unique culinary delights that are appetizing. One of them is vegetable anointing or also known as vegetable anointing. As the name suggests, this typical Javanese dish is made from a mixture of steamed vegetables and served with seasoned grated coconut.
This vegetable ointment dish is often chosen as a daily meal menu because of its practical manufacturing process. But apart from that, vegetable ointment or vegetable ointment is also often served at various important events, such as celebrations, religious and cultural events.
Judging from the manufacturing process, this vegetable anointing is quite practical. You just mix the spices and grated coconut, then steam the ointment spices with the vegetables you want to use. Even though it's easy and delicious, making vegetable ointment like this makes it go stale quickly in 1-2 hours, you know.
If you want it to last longer, there are special tricks when you want to make this vegetable ointment, you know. This trick was once done by YouTube user Mbak Midut. Through one of the uploaded videos, he admitted that he did not steam the vegetables or the ointment seasoning. However, there is a special method so that the ointment seasoning becomes more delicious and the vegetables are perfectly cooked.
How to cook urap vegetables without steaming
Reported by BrilioFood on Friday (16/2), the first thing that must be done is to make the vegetable ointment seasoning. So, grind 3 cloves of garlic, 7 lime leaves, 10 grams of shrimp paste, brown sugar, 15 red chilies, and 3 segments of galangal. Blend with 1 glass of water.
If so, transfer the spices to the pan. Then cook with the addition of 1 teaspoon salt and 1.5 teaspoon stock powder. When the spices are boiling, add 1/2 grated coconut. Stir until mixed evenly and the spices are dry.
"We stir-fried for about 10 minutes," said YouTube Mbak Midut.

Meanwhile, for vegetables, the YouTube user uses Japanese papaya leaves, bean sprouts and long beans. Cut and wash all the vegetables. After that, prepare a pan filled with water to boil the vegetables.
When the water has boiled, add a little salt to keep the vegetables green. After that, add the papaya leaves and long beans. No need to boil it for too long, just 2-3 minutes.

When it's been 2-3 minutes, turn off the heat. Then add the bean sprouts. Just stir for a while because the bean sprouts cook quickly. After that, immediately remove and rinse the vegetables with cold water. This will ensure that the ointment vegetables are not overcooked or too cooked and soft, so they will last longer.

So, if you have rinsed it, immediately drain the vegetables. Basically, this vegetable can be mixed directly with the anointing spices. However, to make it last longer, mix these two ingredients while roasting them in a pan.
You also need to pay attention to how to roast it. First of all, heat a frying pan (without oil). Then add the vegetables that have been rinsed earlier. Roast briefly for up to 5 minutes so that the water evaporates. If so, add the ointment spices. Then stir until these two ingredients are evenly mixed, for approximately 5 minutes.
