Filling ingredients:
- 500 gr oncom, crushed
- 50 gr dried ebi shrimp, soak in hot water, then puree
Ground spices:
- 9 red onions
- 5 pieces of garlic
- 9 curly chilies
- Galangal to taste
Other ingredients:
- Basil leaves to taste
- 20 green bird's eye chilies, cut into pieces
- Salt to taste
- Chicken flavoring to taste
- Pepper powder to taste
- Enough granulated sugar
- Cooking oil
Leather Material:
- 1 kg cassava, grated and squeezed, discard the water
- 150 gr grated coconut
- 2 tsp salt
- 4 tsp chicken flavoring
- 1 tsp ground pepper
- 1 tsp garlic powder
- 1 tablespoon crushed coriander
- 3 tablespoons margarine
- 5 tablespoons tapioca flour
How to make:
1. Heat a frying pan, pour in cooking oil, stir-fry the crushed dried shrimp until fragrant and slightly dry. Set aside.
2. Saute the ground spices until fragrant.
3. Add the crushed oncom, add gram, seasoning, powdered pepper and granulated sugar.
4. Cook again until the oncom is cooked, stirring continuously.
5. Add basil leaves, cook again for a minute, test the taste.
6. Make the skin, mix all the skin ingredients, then taste.
7. Weigh out 45 grams for 1 combro fruit/seed or according to taste. Fill in the oncom ebi.
8. Make 1 combro fruit first, fry and taste test, if you have enough taste then continue.
9. If the skin mixture lacks flavor, then add salt and seasoning.
10. Fry the combro over medium heat and turning.
