Well, this soaking process will make the palm fruit soft and not smell sour because the rice water helps remove particles that absorb odors, making the palm fruit feel cleaner and fresher after being soaked. On the other hand, rice water contains amylase, an enzyme that helps break down starch in rice. This enzyme has the ability to help dissolve and remove mucus and dirt from the surface of the palm fruit. When the palm fruit is soaked in rice water, amylase works to break down substances that cause mucus and odor, making the cleaning process easier.
