Making rempeyek is actually quite easy. With basic ingredients of rice flour, cornstarch, water, and spices, the rempeyek dough can be directly fried in hot oil. Because it uses rice flour, the dough tends to be liquid, so when fried, the rempeyek becomes thin and crispy.
Although it looks easy, many still fail to make rempeyek. For example, rempeyek becomes too thick and hard, or easily becomes soft when cold. In addition, another problem that often arises is oil that quickly gets dirty. Like other fried foods, if the fried ingredients contain flour, the oil can become cloudy.
However, there is a special way to prevent this. The key is in the rempeyek dough. If the dough is right, the result can be super crispy and the cooking oil remains clear.
Furthermore, a YouTube user Mama Pin Pan once shared a trick to make super crispy rempeyek that doesn't make the oil dirty. After investigating, it turns out she used one additional ingredient, namely ice cubes. In the upload, she further explained the function of these ice cubes.

Not only explaining about additional ingredients, the YouTube user also explained how to make rempeyek dough clearly. First, grind 4 cloves of garlic, 3 candlenuts, and a finger of galangal. Then set aside first.

After that, put 150 grams of rice flour and 150 grams of cornstarch in a bowl, then stir well. After that, add the ground spices, stir again. If so, 1.5 tsp of coriander powder, 1 tsp of turmeric powder, 3/4 tsp of salt, and 1 tsp of broth powder. Then stir until completely blended.

Next, dissolve the dough with 175 ml of water poured in gradually. The amount of water can be adjusted to the desired thickness of the rempeyek. If you want a thick texture, then the water can be reduced. And vice versa.
Once done, add 1 beaten egg, stir until well blended. Then add 10 finely chopped lime leaves. Make sure the center bone of the lime leaves is removed so that it doesn't taste bitter.

Finally, add a handful of ice cubes and 1/4 kg of chopped peanuts. Keep stirring until the ice cubes melt a little and the dough starts to cool. Only then is the rempeyek dough ready to be fried.

When frying, use a lot of hot oil. Then fry with a stable medium heat. If the rempeyek is half dry, then turn it over and wait until all parts are perfectly cooked. Then remove and drain the cooked rempeyek.
