A YouTube user named Ngemil Doang once proved how to make rempeyek without using rice flour. He used other types of flour available in the kitchen. Even so, the rempeyek results were still thin and crispy.

As reported by BrilioFood from YouTube Ngemil Doang on Sunday (15/9), he uses wheat flour as the main ingredient instead of rice flour. Wheat flour is easier to get because it is often used as the main ingredient in making various types of fried foods.

But it should be noted that using wheat flour alone can make the dough soft. Therefore, he also added cornstarch. The mixture of these two types of flour is the key to the crispiness of rempeyek.

For more details, prepare a bowl first. Then add 12 tablespoons of flour and 2 tablespoons of cornstarch. Also add seasonings such as salt, pepper, powdered broth, and ginger powder to taste. If so, add a little liquid coconut milk so that the texture of the dough can be smooth and soft.

Before stirring, add the ground spices made from shallots and garlic. Then stir until well blended. Now, while stirring, pour in water little by little so that the dough does not clump. Make sure the final result of the dough is runny, okay. Finally, add the sliced lime leaves, then stir well.

In addition to lime leaves, the YouTube user also added rebon shrimp to the filling. But before adding the rebon shrimp, first transfer some of the dough to a plate. Then add the rebon shrimp to taste and mix well.

Next, print the dough on the edge of the pan that has been filled with hot oil. Then fry over medium heat until golden brown. Don't forget to turn it over so that the rempeyek dough can cook evenly. When it's crispy, remove and drain.

To maintain its crispiness, you can store this rempeyek in an airtight jar. But make sure to store it in a cold condition. That way, the rempeyek can stay crispy and not soft for up to 1 month.
