Brilio.net - Yellow rice is one of the typical Indonesian dishes that has a special taste. The process of making yellow rice involves mixing white rice with spices, coconut milk, and turmeric as a natural dye. The combination of these ingredients produces rice with a more savory aroma and taste than regular white rice.
The use of coconut milk in making yellow rice causes this food to go stale easily after being cooked. Stale yellow rice is characterized by a sour taste and slimy texture. This condition often leads to wasted food.
A video on Akmal Indah's YouTube channel shows a method of cooking yellow rice that can last longer. This method does not use lime juice which is often added as a natural preservative. The results of yellow rice cooked in this way still have good quality without the risk of changing the taste to sour.
"The result is fragrant, tastes savory, and is guaranteed to last a long time," he explained, quoted by BrilioFood from YouTube Akmal Indah on Tuesday (12/11).
First, wash the rice that will be used thoroughly. To get maximum cleanliness, the rice can be rinsed 2-3 times, then drained. If so, do not immediately cook the rice with the spice mixture, but steam it first until half cooked and fluffy.

While waiting for the rice to be half cooked, prepare the yellow rice seasoning. Puree the garlic and shallots. Once done, saute the ground spices until they are brown and fragrant. Once fragrant, then add the turmeric powder, stir evenly.
"Cook until the spices are completely cooked so that it doesn't taste rancid and the yellow rice doesn't go stale quickly," he explained further.

When the spices are completely cooked, add coconut milk and salt to taste into the pan. Don't forget to add various other spices such as bay leaves, lemongrass, and pandan leaves so that the yellow rice produced is even more savory and fragrant. Cook until boiling.

When it boils, add the half-cooked rice into the spice solution that has been made. While stirring occasionally so that all the spices can be absorbed by the rice evenly. Cook the rice until the water content reduces and the color is perfectly yellow.

In order to cook perfectly and last a long time, yellow rice is not served immediately. However, yellow rice must be steamed first for a while. If the texture is slightly dry, the yellow rice is ready to be lifted and served. Because it goes through a long process, the resulting yellow rice will not go stale quickly.
