Material:
- 400 gr blood clams without shells
- 30 skewers
- 1 tablespoon tamarind water
- 1/2 tbsp salt
- 2 stalks of lemongrass, white, bruised
- 500 ml of water

Ground spices:
- 1 cm galangal
- 1 tsp salt
- 1 tsp shrimp paste, fried
- 2 candlenuts, roasted
- 2 cm ginger
- 2 cloves of garlic
- 6 red onions

Sauce ingredients:
- 1 1/2 tbsp sweet soy sauce
- 1 tablespoon oil for frying
- 1 tsp salt
- 100 gr fried peanuts, crushed
- 200 ml hot water
- 3 red chilies, chopped
- 3 red bird's eye chilies, chopped
- 4 cloves of garlic, chopped
- 50 grams of coarsely grated young coconut, roasted and then mashed

How to make:
1. Boil the clams with lemongrass, tamarind water and salt until boiling and tender.
2. Mix ground spices and shellfish.
3. Skewer the scallops with a skewer.
4. Grill over coals until cooked.
5. Prepare all the sauce ingredients, heat the oil.
6. Saute the garlic, red chilies and cayenne pepper until fragrant.
7. Blend all the spices.
8. Add peanuts, grated coconut and sweet soy sauce.
9. Add water and salt then stir until smooth.
10. Pour the sauce over the Kakul satay.
11. Kakul satay is ready to be served.
