What is done is to remove the tail of the tuna. The way to do this is to break the tail, then pull and twist it until you hear a 'crack'. This sound indicates that the tail has separated from the bone.
If so, pull until the tail fibers are separated from the body. Do this process for all fish to be processed. It is known that these tail fibers are the site of absorption of poison in tuna which causes itching.
