Candlenut is a kitchen ingredient that is often used in Indonesian cooking , to add texture and savory flavor to food. When ready to use, candlenut seeds are usually ground first. This process will give a distinctive taste and make the cooking spices thicker. Not only as a spice, candlenut is also high in oil, suitable and versatile for various recipes. Starting from everyday food to more complex traditional dishes.

However, there is one drawback to this type of nut, namely in the storage process. When stored, candlenuts can easily be infested with mites and mold. Because of its high oil content, candlenuts are susceptible to moisture and less than ideal storage conditions. If not stored properly, candlenuts can become a nest for mites and mold. This will certainly ruin the taste and texture.

To overcome this problem, it is important to store candlenuts in a dry and cool place, and use an airtight container. Usually, some people choose to put candlenuts in a jar and then put them in the refrigerator. In fact, the refrigerator is not an ideal place to store candlenuts because they can be damp and eventually moldy.

If it feels dry, immediately turn off the stove. But don't store it right away. Let the candlenuts cool completely first. Then move the candlenuts into a dry and clean jar, then store at room temperature. Roasted candlenuts can last longer and are not easily infested with mites, mold, or musty odors because the roasting process helps remove moisture and inhibits the growth of microorganisms. High temperatures during roasting can kill bacteria, fungi, and mite eggs that may be on the surface of the candlenuts. This helps prevent contamination and the growth of microorganisms that can damage the candlenuts during storage.
