Brilio.net - Restaurants that serve seafood often offer a variety of menus to satisfy customers' tastes. Every seafood lover usually has their own favorite dish, whether it is made from shrimp, crab, or fish. Of the various cooking methods available, dishes with Padang sauce are often the most preferred choice.
Padang sauce is famous for its complex blend of flavors, including sour, sweet, spicy, and savory. In addition, the aroma of spices used in this sauce adds to its appeal. Although usually enjoyed in restaurants, Padang sauce dishes can actually be made at home.
Cooking Padang sauce at home has several advantages, such as cost savings and the freedom to adjust the flavor to your liking. A YouTube user named Puguh has shared a Padang sauce recipe through his personal channel. In his video, Puguh not only teaches how to make Padang sauce, but also provides special tips on how to store the sauce so that it lasts longer.
First of all, prepare the spices such as shallots, garlic, cayenne pepper, large red chili, galangal, lemongrass, and candlenuts. These spices, both lemongrass and galangal, must be processed into fine spices, not just cut into pieces. The function is so that the Padang sauce will be thicker later.
"So the galangal and lemongrass are also ground, yes. It has to be really smooth because there are those two ingredients," said Puguh, quoted by BrilioFood from YouTube Puguh Kristanto Kitchen on Friday (4/10).

After that, heat the oil on a Teflon pan. When the oil is hot, pour in the ground spices. Stir briefly and cook over low heat until boiling. Then when it boils, immediately add the powdered spices one by one, namely sugar, salt, pepper, and flavoring.

Then add various sauces to make the Padang sauce taste even more delicious. You can use oyster sauce, tomato sauce, and chili sauce. After investigating, adding various sauces can also help thicken the Padang sauce later when it is cooked. Stir occasionally and wait until the oil comes out.
"Cook until the oil comes out, that's what will make it last," explained Puguh.

If the oil has come out, it means the stove can be turned off. If you want to store it, padang sauce can be cooled first before being put into an airtight jar. The storage method is also very simple, just put the padang sauce in the refrigerator chiller.
"Don't put it in the freezer, just put it in the refrigerator, it will last 2 weeks to 1 month," said Puguh.

Wow, it turns out it's easy to make Padang sauce typical of seafood restaurants? Peeking at the comments column of Puguh Kristanto Kitchen's YouTube upload, many netizens admitted that they were interested in trying to make this sauce at home. This upload has also been watched more than 38 thousand times.
"Wow, this is perfect, if you want to make clams with Padang sauce. Thank you bro for the chili sauce recipe," said YouTube ari_landri22.
"Try it tomorrow ahhh, thanks for the recipe, bro, it's great," said YouTube NiNdy Ana.
"When I store chili sauce and spices, I usually don't put plastic in small plastic bags (1 ounce), fill them with spices for cooking once, then tie them tightly, then freeze them, they last for months without changing the taste. If I want to cook, I take them out on the 1st day, melt them and then cook," explained YouTuber Isti Rahardjo.
"Is it okay to replace it with real tomatoes?" asked YouTube Berty Prananta.
