Basically, mochi is made from sticky rice flour, sugar and water which has a chewy and elastic texture. When heated, changes occur in the molecular structure and internal pressure of mochi, including the starch molecules in sticky rice flour.

The starch molecules in sticky rice flour undergo gelatinization, where they absorb water and expand. If this process occurs too quickly or too intensely, the structure of the mochi can become too tense and eventually break or explode.
