Brilio.net - Bika Ambon is one of the delicious dishes typical of the archipelago. Even though its name is bika ambon, this snack is a traditional cake typical of Medan, North Sumatra. Bika Ambon has a soft texture and the inside consists of cavities like a honeycomb.

Coconut milk ingredients:
- Take 1000 ml of coconut milk from 2 coconuts
- 3 pandan leaves
- 10 lime leaves
- 1 lemongrass stalk
- 2 turmeric segments cut into pieces
- 1/2 tsp salt

Cake ingredients:
- 10 egg yolks
- 2 whole eggs
- 400 ml cooked coconut milk
- 300 gr sago flour
- 300 gr granulated sugar

Ingredients:
- 1 tbsp flour
- 6 tbsp warm water
- 1 pack of fermipan
- 1 tsp granulated sugar

How to make:
1. Cook all the coconut milk ingredients over medium heat until only 400 ml remains. Remove, cool.
2. Mix together the ingredients. Leave it for 10 minutes.
3. Beat the eggs and sugar with a mixer until the sugar dissolves.
4. Lower the mixer speed, add the coconut milk and sago flour alternately until finished. Stir well.
5. Enter the starter. Mix well again. Turn off the mixer then strain the mixture.
6. Beat the dough with a wooden ladle for at least 15 minutes.
7. Close the container, let the dough rest for approximately 3 hours.
8. Prepare an 18x18cm baking pan. Spread margarine and sprinkle with flour. Heat the baking sheet at the same time as the oven.
9. Pour the mixture into the hot baking pan. Bake at 180C for 40 minutes. Leave the oven slightly open for the first 30 minutes, then close the oven tightly, bake until cooked.
10. Remove and cut into pieces after the cake has cooled. Serve.
