Corn fritters are made from corn kernels mixed with flour dough. Some people add other ingredients such as vegetables or shrimp to enrich the texture and taste. The fritter dough is then fried in a lot of oil to make it crispier.

Although corn fritters can be created with various ingredients, the main ingredients are still corn kernels and wheat flour. Wheat flour serves to bind the other ingredients so that the fritters do not fall apart easily when fried.

However, the use of wheat flour sometimes makes the fritters soft. Soft fritter dough can absorb a lot of oil when fried, resulting in a soft and oily texture, which is certainly less delicious when eaten.

To produce crispy and crunchy corn fritters, you can copy the trick from YouTube user Mbok Midut. In one of her videos, she revealed that she doesn't use wheat flour.

As reported by BrilioFood from YouTube Mbok Midut on Thursday (26/9), he uses two types of flour, namely rice flour and tapioca sago flour.

Before adding flour, prepare the other ingredients needed. In the video, Mbok Midut uses 2 corn kernels, 3 sliced carrots, and 3 sliced spring onions. Put all the ingredients in a container, then add 3 cloves of sliced garlic and 250 grams of rice flour.

For flavoring, add 1 tsp of powdered broth, 1 tsp of pepper powder, 1/2 tsp of salt, 1/2 tsp of MSG, and 1/4 tsp of turmeric powder. Stir until well blended. After that, add 300 ml of water gradually while stirring.

"If you have cold water, you can use it, the results will be crispier," explained YouTube Mbok Midut.

Next, add 3 tablespoons of tapioca sago flour. According to Mbok Midut, this type of flour will make the texture of the fritters crispier. In addition, tapioca sago flour also functions as a binder for the dough so that it doesn't fall apart easily when fried.

After being given tapioca sago flour, stir again until evenly distributed. Then test the taste. If so, mold and fry the dough in hot oil. Make sure the mold is flat and thin so that the results are crispier. The oil used must also be really hot so that the fritters do not absorb much oil.

When frying, do not flip the fritters. Wait until the texture is really solid and starts to dry. If one side is solid, then flip and fry the other side. That way, the fritters will not fall apart easily.

Fry the fritters until they are completely cooked and crispy. Once cooked, remove and drain. These corn fritters are really crispy and crunchy when bitten.
