Brilio.net - Shallots are commonly used as a basic spice in various dishes, such as stir-fries. This kitchen spice can indeed enhance the taste of dishes. Not only that, the aroma of the dish can also be more delicious if added with shallots.
There are various ways to use shallots. First, shallots can be sliced to be directly sauted or mixed into dishes. Second, this spice can also be fried to be used as a topping or base seasoning for meatball soup.
Fried shallots have a crispier texture and a more delicious aroma, making the dish even more delicious. Unfortunately, not everyone can fry shallots with satisfactory results. In some cases, the fried shallots are actually burnt and soft because they absorb too much oil.
Well, to overcome this, some people usually do special methods, such as coating sliced shallots with flour. In addition, there are also those who choose to soak shallots in vinegar water. Both of these methods are considered to be able to make shallots crispier.
But instead of using additional ingredients, there is actually another trick that can be done when frying shallots. This trick was once shared by Instagram user @naufaltannaz through one of the uploaded videos. He admitted that the trick he did could be an alternative if you don't like fried onions that are given flour because the taste changes.
"If you buy it at the market, most of the fried onions are floured like that. And if you buy fresh fried onions, the price is really expensive," said Instagram @naufaltannaz, quoted by BrilioFood on Sunday (11/8).

Then to make pure fried onions without flour, you just need to prepare peeled shallots. After that, wash them clean and slice them as thinly as possible. If you have an onion slicer, you can use it so that the results are even and thin.

Next, prepare cooking oil in a frying pan and heat it. When the oil is hot, add the sliced shallots. Fry over low or medium heat while stirring occasionally. This is done so that the shallots are evenly cooked.

Now, if the shallots have started to turn yellow, immediately lift and drain the shallots. So don't wait until they are completely dry because they will burn. The reason is, shallots that have been drained will usually be more cooked because the temperature is still hot. Therefore, if the shallots are lifted when they are brown, the result will be darker brown or burnt.

To make the fried onions crispier, drain them twice. First in a drainer, then on a paper towel. Well, this paper towel will absorb the remaining oil that is still stuck to the fried onions. That way, the fried onions will be crispier when they are cold.
When it's cold, the fried shallots do become a bit sticky. But you can separate them with chopsticks. After that, you can sprinkle salt while separating the fried shallots to make it taste more savory.
"This is guaranteed to be very crispy," said Instagram @naufaltannaz.
