Brilio.net - Eggs are often the choice of economical and delicious side dishes for rice at home. This food ingredient can also be created into various dishes. One of the simplest ways to cook is to make an omelet. However, sometimes you feel bored with ordinary omelets. To avoid boredom, this food can be changed to be more delicious and interesting.
Instead of making regular omelets all the time, you can create them into Padang restaurant-style omelets that have a crispy and savory texture. Unlike regular omelets, the oil used to cook Padang omelets tends to be a lot so that the results can be crispy. A netizen on the YouTube account Sibungbung Official Channel once shared a trick for processing it.
According to her, not only the use of quite a lot of oil, the choice of ingredients to make Padang omelettes also affects the results. Most people make crispy omelets with the addition of wheat flour, but it is different with this woman who is familiarly called Sibungbung. So, curious about her trick?
"This is the secret of crispy eggs typical of Padang restaurants. Serve with coriander leaves, this is also delicious when dipped in chili sauce," he said, quoted by BrilioFood from the YouTube Sibungbung Official Channel on Thursday (6/11).
After the eggs are beaten and mixed with various spices such as salt, powdered broth, shallots, and spring onions, then add the flour. Instead of using wheat flour, Sibungbung uses tapioca flour because it can produce a crispier and curly egg mixture. Then, stir until all ingredients are evenly mixed.

Next, prepare the oil in a pan. Sibungbung uses a pan with high edges, so that the eggs do not spread and are thicker when fried. Heat over medium to high heat, wait until the oil is really hot, then pour the eggs slowly. There is one more trick to make the omelet more curly, namely while pouring it into the oil, the eggs must be stirred using chopsticks.
"Don't fill it with too much oil because it (the omelet) will rise. So (the oil) doesn't overflow," said Sibungbung.

When all the omelet mixture is in, turn down the heat and wait until the bottom of the egg is browned and cooked. Then, flip the egg and continue cooking until it is cooked completely. Finally, when the egg is cooked and crispy, remove and drain the Padang omelet before serving.
