One of the characteristics that makes meatballs even more delicious is their chewy texture. Meatballs made from beef can also be made with a chewy texture. Usually, some people use chemicals to thicken the beef meatball dough.
However, some people are reluctant to add the thickening agent. Instead, they use ice cubes or ice water. This ingredient can make the meatball dough more elastic and chewy when boiled.
Unfortunately, not everyone always has ice cubes or ice water in the refrigerator , and making it takes quite a long time. This makes some people reluctant to make their own meatballs at home.
In fact, there is a trick that can be done to replace the ice cubes. A YouTube user named Rita Umila once shared it through one of the uploaded videos. She admitted that her meatballs could remain chewy even without using ice cubes.

As reported by BrilioFood on Sunday (29/9), the first thing to do is to prepare the meatball dough first. Put in 250 beef, then grind it with a chopper or meat grinder. Then put in 2 cloves of minced garlic, 1-2 tablespoons of fried shallots, 1 teaspoon of salt, 1/2 teaspoon of mushroom broth, 1/2 teaspoon of pepper, and 1 egg white into the chopper. Stir again until evenly mixed.

Once done, open the chopper and add 5 tablespoons of tapioca flour as a binder for the dough. In addition to being a binder, tapioca flour also makes the meatball texture more chewy. After adding flour, add 1/2 teaspoon of baking powder and 1/2 tablespoon of granulated sugar. Then close the chopper and stir again.

The finished meatball dough can be immediately transferred to another closed container. Well, before it is ready to be molded, store it in the refrigerator for at least 3 hours. Because the dough does not use ice cubes, this method will make the dough more chewy.

After letting it sit for 3 hours, then mold the meatball dough. The molded dough can be directly put into hot water that has been previously boiled (no need to boil it). If all the meatball dough has been molded, then boil the meatballs until cooked or until the meatballs float to the surface.
When it's cooked, remove and drain. In the video, the cooked beef meatballs look chewy and soft. Even though the meatball dough is not made with a mixture of ice cubes.
