However, it is not always necessary to boil cassava to make it soft. There is another technique that can make cassava soft, crispy, and cracked. This method was shared by TikTok user @yuk_masakkk. In the video, cassava is fried twice to get a soft texture. Between the frying process, the cassava is soaked in spices to maximize the savory taste.
As reported by BrilioFood from TikTok @yuk_masakkk on Wednesday (8/1), the first thing to do is prepare the cassava. It is better to choose fresh cassava so that it can quickly become soft and crack. Then peel the cassava and cut it into several pieces. Don't forget, wash the cassava thoroughly while scraping the outside so that it is not bitter.

Next, prepare the marinade. In the video, he uses 4 cloves of finely ground garlic. Put this garlic in a bowl that has been filled with cold. In addition to garlic, also add salt, MSG, and coriander powder to taste. Set aside first.
In a pan, pour quite a lot of oil and heat it over medium heat. When it is hot, add the cassava that has been washed clean. Then fry the cassava until it turns yellow. After that, remove and drain.

Immediately after draining, dip the cassava into the container containing the spiced water. Stir and soak the cassava until it cracks. Usually, cassava will immediately crack because of the drastic temperature difference (from frying to cold water). Well, this is what also makes the cassava softer.

If there are already some parts of the cassava that have cracked, immediately lift them and separate them into another container. Then if there are still other parts that are stiff, you can soak them longer.
Next, fry the cassava that they have in a frying pan filled with hot oil. At this stage, just fry the cassava over low heat until it is golden brown. Now, the cassava that is already crispy can be immediately removed and drained. You can eat it directly with your favorite chili sauce or sauce.
