Well, the banana heart that has been cleaned of its petals can be cooked directly. Usually the banana heart will be boiled first before being processed with various spices. This is important to do to remove the sap and make the banana heart feel softer.

However, it should be noted that the cooking process also requires precision because the banana heart can turn black if not cooked properly. To keep the banana heart white and free from sap when boiled, there are several tricks that can be done. First, before boiling, the banana heart should be soaked in salt water or acidic water (a mixture of water with lime juice or vinegar) for a few minutes. This soaking process helps reduce the sap that can cause a bitter taste and prevents the color from changing to black.

After soaking, rinse the banana flower until clean, then boil it in water that has been given a little salt and lime juice. Make sure the boiling water is in sufficient quantity and always boiling when the banana flower is put in to lock in its natural color. Use medium heat so that the banana flower cooks evenly without losing its bright color.

Once ripe, immediately remove and soak in cold water to stop the ripening process and maintain its white color. With these steps, the banana flower will remain white, free of sap, and ready to be processed into various delicious dishes.
