Brilio.net - Scallions are often used for cooking. Their distinctive aroma and fresh taste make them a complementary seasoning to enhance the flavor of dishes. In addition, scallions are also high in nutrients such as vitamins A, C, and K, as well as various antioxidants that are beneficial for health .
One of the most common ways to use green onions is by thinly slicing them. Sliced green onions can be used as a topping on dishes like soups, noodles, and salads to add flavor and appeal. However, when sliced, green onions sometimes produce a slime. This slime is actually a natural sap that helps protect the green onions from drying out and pests. While it is not harmful, the presence of this slime can be a bit annoying if not handled properly.
To reduce the mucus that comes out when slicing spring onions, there is a trick that can be applied. This simple trick was once practiced by TikTok user @melizah615. Through one of the videos uploaded, she admitted that she could slice spring onions more cleanly without releasing mucus.
After further investigation, this TikTok user used one kitchen ingredient. As reported by BrilioFood from TikTok @melizah615 on Thursday (10/24), the kitchen ingredient in question is salt. Well, salt is considered to be able to bind the mucus in the spring onions. Therefore, the mucus does not come out when sliced.

Simply place the spring onions on a cutting board. Make sure the spring onions are clean and washed. Washing the spring onions can minimize the appearance of slime when sliced.

After that, sprinkle the spring onions with salt evenly. Then, slice them using a sharp knife. Well, a sharp knife can also produce cleaner spring onion cuts and minimal pressure on the spring onion fibers. This is an important key so that the spring onions do not produce mucus.

In the video, TikTok user @melizah615 shows the results of sliced spring onions. Sure enough, even though they are thinly sliced, no slime comes out of the spring onions. Therefore, the sliced results are neater and cleaner.
Well, salt itself can prevent spring onions from becoming slimy when sliced because of its osmotic properties. When spring onions are sprinkled with salt, the salt draws water out of the spring onion cells through the process of osmosis. The water in the spring onion cells will come out to the surface, due to the difference in salt concentration inside and outside the cells. This process reduces the amount of water in the cells that contributes to the formation of slime when spring onions are sliced.
On the other hand, the sap or mucus released by the leeks when sliced is actually the fluid inside the leeks' cells. By reducing the water content in the cells through osmosis, the amount of sap released when sliced will also be reduced. Salt helps to draw some of the water out of the leeks before the slicing process, so that when sliced, much less mucus is produced.
