Barendo eggs are one of the favorite menus in Padang restaurants. This egg dish has a crunchy texture and savory taste. Not only that, the curly and hollow shape of the egg is a special attraction, so many people choose it as a side dish.

Basically, barendo eggs can be made like regular omelet dough. However, to produce a curly shape, the eggs do need to be fried with a special technique. Usually the egg dough will be fried with a lot of oil, so that the edges are crispy and curly, while the middle remains soft.

In addition to the frying technique , another thing to consider is the omelet batter. Some people usually use additional ingredients such as flour to improve the texture of the egg when fried. In some cases, some also add baking soda to the egg batter mixture so that it can expand and dry.

But actually, you can still make crispy and curly barendo eggs without the addition of these ingredients. A chef named Aaron Laksana once proved it through one of the uploaded videos. This creator counter admitted to only using eggs as the basic ingredient for making barendo eggs.

As reported by BrilioFood from Instagram @aaron_laksana on Monday (19/8), he admitted to using 4 duck eggs. Basically, barendo eggs are tastier using duck eggs because duck eggs have thicker yolks than chicken eggs. Duck egg yolks provide a more savory taste and a softer texture in the middle of the barendo egg. In addition, duck egg whites tend to be thicker, so when fried using the barendo technique, the edges of the eggs become crispier and curly.

In addition to the eggs, prepare finely chopped shallots, garlic, red chilies, and spring onions. Then put them in a bowl, along with the duck eggs. After that, add salt, pepper, seasoning, and powdered broth. Stir using a whisk until evenly mixed.

Next, pour a lot of oil in a frying pan and heat it. Once done, pour the egg mixture from a slightly high direction. This will create a nesting and curly egg texture. Well, fry until the egg is completely dry.

If the bottom is dry, then turn the barendo eggs. Then continue to fry until the texture is dry and the eggs turn golden brown. Next, drain and transfer to a serving plate. To make it prettier, you can add sliced spring onions as a sprinkle on top.
