Brilio.net - Traditional cassava tape is usually wrapped in banana leaves, a method that has been used for a long time. Banana leaves not only add aroma and distinctive taste to tape, but also have an important function in the fermentation process. According to research from repository.unpas.ac.id, banana leaves help microbes in yeast work more effectively to convert ethanol into acetic acid, speeding up the fermentation process and producing tape with the right sweet taste.

However, in this modern era, especially in urban areas, getting fresh banana leaves is a challenge. This often makes people hesitate to make cassava tape at home.

In fact, making cassava tape can still be done without using banana leaves. Alternative wrappers such as plastic can be used as a substitute. This method has been demonstrated by a YouTube content creator from the SAHABAT KECE channel.

In her video, she shows how to make cassava tape using plastic as a wrapper. The result is sweet cassava tape with a soft and melty texture . This method is claimed to produce consistent tape and reduce the risk of failure in production.

To make it, you need to prepare cassava. Reported by BrilioFood from YouTube SAHABAT KECE on Wednesday (2/10), the YouTube user used 1 kilogram of cassava. Peel and wash it thoroughly. Then cut it into two parts.

In addition to cassava, also prepare 1 grain of yeast and 1 tablespoon of granulated sugar. Tape made with banana leaves generally does not use granulated sugar. However, because it will be packaged in plastic, YouTube user SAHABAT KECE added granulated sugar to make it taste sweeter.

First, scrape the outside of the peeled cassava. Then wash it again until it is completely clean. This aims to remove the remaining toxins and bitter taste that stick.

After washing it clean, cut the cassava into smaller pieces. Then steam it for 20 minutes until cooked. If so, remove and let the cassava cool completely.

Next, grind or puree the yeast. Then sprinkle it on the surface of the cassava. Put the cassava one by one into the plastic while continuing to sprinkle the yeast evenly. Finally, sprinkle with granulated sugar and smooth it out.

If so, fold the end of the plastic without needing to be glued with rubber or other adhesives. Then put the plastic into the container. In order for the fermentation process to be maximized, pack the container again with cloth. Let it sit for 2 full days.

After 2 days, the cassava tape will give off a distinctive aroma. In the video, the tape looks cooked and the texture is very soft. According to YouTube user SAHABAT KECE, the taste is no less sweet than tape made with banana leaves.
