There are also those who boil the eggplant first before frying and cooking it with spices. However, there is a simpler way to maintain the bright purple color of the eggplant even after frying. This method is shared by YouTube user YN Cooking.

In one of her videos, YN Cooking shares a trick for frying eggplants to keep them bright purple without any additional ingredients. The trick involves proper cooking techniques to maintain the eggplant's color and texture.

First, cut the eggplant according to taste. After that, prepare a bowl of water to soak the eggplant so that it does not turn black. No need to soak for long, after that heat the oil to fry the eggplant. Make sure the cooking oil is really hot.

In addition to being fried in hot oil, the process of putting the eggplant in the pan also needs to be considered so that the color does not change. The YouTube user dipped the eggplant in the oil with the purple eggplant at the bottom.

This way, the eggplant will remain a beautiful purple color after it is cooked. Also, pay attention to the frying time. Do not fry the eggplant for too long because its texture will quickly become soft. If it is already wilted, the eggplant can be turned over immediately.
