Well, after steaming, immediately pound the dough until it is completely smooth. In the video, the account owner even pounded it using wood. Then so that it doesn't stick, the wood is coated with plastic first.

Now, the dough that has been pounded and is elastic, can be directly molded into a flat shape. Use gloves and coat it with roasted cornstarch. This aims to prevent the mochi from sticking and making it easier to shape.
