Reported by BrilioFood from Instagram @trihartatiiii on Friday (7/11), she instead chose papaya as the basic ingredient for making bottled sauce.

Papaya's natural sweet and slightly sour flavor makes it a versatile ingredient for a variety of sauces. This flavor can easily be combined with a variety of herbs and spices to create complex and interesting flavor profiles. Therefore, papaya is suitable for use in making a variety of sauces.

How to use it, peel 1 ripe papaya and remove the seeds. Then cut it into small pieces. After that, steam the papaya together with other spices, such as 1 handful of shallots, 1/2 handful of garlic, red chili, and cayenne pepper to taste. Well, the function of steaming is to make the papaya and other spices not smell bad.

When it is cooked, put all the ingredients in a blender. Then add water, then blend until smooth. Next, strain the papaya juice and cook in a teflon pan. Don't forget to add 2 tablespoons of sugar, 1 tablespoon of salt, and 1 teaspoon of MSG if you like to make it taste even more savory. Then cook until it really shrinks or thickens.

When it thickens, add 1 tbsp of vinegar to make the sauce last longer. Then cook again briefly until it boils again. After that, turn off the stove and let it cool. Then transfer it into a sauce bottle. If stored in the refrigerator, this sauce can last up to 1 week.
