Brilio.net - Kolang kaling is one of the most popular food and beverage ingredients during the month of Ramadan. The seeds of this aren fruit are perfect for making takjil dishes, such as mixed fruit ice, kolak, or sweets. In addition to being known for its chewy texture, kolang kaling also has a delicious taste. However, this can only be achieved through the right processing process.

Usually, the kolang kaling sold has a sour and slimy taste. To remove the sour taste and slime, many people soak the kolang kaling in rice washing water. This water effectively neutralizes the strong sour smell and removes the slime after being soaked for a long time.

This method tends to be effective, but actually there is another method that is no less effective. Namely by processing palm fruit without soaking it in rice washing water. Yup! Basically palm fruit can be processed more practically, you know.

This was once explained by a YouTube user named mamah kbr dinadini. She did not rely on a special liquid to process the palm fruit. Even so, the palm fruit can be soft and the sour smell is gone.

As reported by BrilioFood from YouTube mamah kbr dinadini, Friday (8/11), the first thing to do is wash the kolang kaling . When you just buy it, the kolang kaling must be washed several times. When washing, throw away the part of the kolang kaling that is still white because that part is usually hard and difficult to soften even if boiled for a long time.

After washing, put the palm fruit into a pan filled with water. Then boil the palm fruit until it boils. Then drain for a few hours until the palm fruit is completely dry.

Continue by moving the palm fruit to the pan. Then add granulated sugar. For 1 kilogram of palm fruit, add 1/4 kilogram of granulated sugar.

Then add 2 sachets of vanilla powder. If you have pandan leaves, you can add more to make it more fragrant. Then stir all the ingredients until well mixed.

"Here, mom doesn't use water to cook it, so that the palm fruit will last longer. Later, the water will come out of the palm fruit," explained YouTube mom kbr dinadini.

While stirring, cook the sugar palm fruit over low heat. To make it more interesting, add pandan paste (another flavoring). In the video, YouTube user mamah kbr dinadini also added 1/4 tsp of salt to balance the flavor.

When cooked, the sugar will melt and the palm fruit will release water. At this stage, keep stirring until the water boils. Then turn off the heat and let it cool.

"When it's cold, the palm fruit can be put in the refrigerator. And it tastes better when served cold," said YouTube mamah kbr dinadini.

Well, this cooked kolang kaling can also be used as a stock of takjil or snacks at home. Because if stored in the refrigerator, kolang kaling can last up to 1-2 months. Quite long, right?
