Through his Instagram account, Chef Martin said he has a trick for frying corn fritters that is effective in making them crispy for a long time. According to him, there is one other kitchen ingredient that you can add. Instead of using baking soda, he uses another ingredient to produce the most crispy corn fritters.

Before going into the trick, prepare a bowl first. Then, put the corn in it. Martin explained that he prefers to use 1 ear of corn kernels with intact grains and 1 ear of shaved corn. As a result, the texture of the corn on his homemade perkedel will still feel intact.

Then, mix the corn with various ingredients such as flour, pepper, garlic powder, salt, and granulated sugar. Well, this is the key, Martin also added a little rice flour so that the corn fritters can be crispy for a long time. "In addition to being crispy for a long time, I also added aromatics from lime leaves and celery," he added, quoted by BrilioFood from Instagram @marinpraja on Thursday (8/15). Next, add enough water and stir well. Martin only uses 5 tablespoons of water, so the texture of the dough is quite thick.

Once the dough is done, prepare a frying pan filled with oil and heat it over medium heat. When the oil is really hot, then fry the corn fritter dough until cooked. Martin said, the frying process is only done for 7 minutes to produce crispy corn fritters.
