Material:
- 1/2 young free-range chicken, cut according to taste
- 2 bunches of basil
- 5 kaffir lime leaves
- 2 sprigs of spring onions
- 1 pandan leaf
- 1 turmeric leaf, finely sliced
- 2 stalks of lemongrass
- 1 tomato, roughly chopped
- 1 lime
- Salt, sugar and cooking oil
Coarse ground spices:
- 7 red onions
- 4 cloves garlic
- 8 curly red chilies
- 2 roasted candlenuts
- 10 red and green cayenne peppers
- 1 segment of ginger
- 1 cm turmeric
How to make:
1. Wash the chicken, cover with lime juice, let stand 10 minutes, wash again until clean, set aside.
2. Saute the coarsely ground spices until fragrant, add the tomatoes, lime leaves, turmeric leaves, lemongrass and pandan, stir well, add the chicken, season with salt and sugar, stir until it changes color, pour in 1-2 glasses of water. , cover, stir occasionally so that the spices are absorbed.
