Heni explained, to produce crispy and curly fried bananas, you need to make two types of dough. The first dough must be made thick to coat the bananas. This thick dough can be made from a mixture of medium protein wheat flour, rice flour, salt, granulated sugar, baking powder, liquid margarine, vanilla, coconut milk, and water.

All of these ingredients can be stirred using a whisk until there are no more lumps of flour. After that, put the banana pieces into it. Heni also said, so that the fried banana results are more beautiful later, she sliced the bananas into a fan shape.

Next, just mix the second dough, which is a more liquid dough. In this dough, Heni explained, she did not use wheat flour at all, but used rice flour and tapioca so that the texture became much crispier than the previous dough. Then, mix it with eggs, vanilla, salt, sugar, baking powder, and water.

This liquid dough can be put into a bottle with a lid that has been given a hole. So, the dough that is put into the oil can be shaped into small, crispy curls.

Once all the dough is ready, it's time to heat a lot of oil on a frying pan using medium heat. If the oil is hot, the liquid dough must be put in first like when making kremesan. Wait until the dough is stiff, then put in the banana pieces that have been dipped in the thick dough.

After the bananas are in, immediately separate the kremes mixture using a spatula, wait until the bottom is slightly cooked, then flip the bananas. You can wait until all sides of the bananas are perfectly cooked or add more liquid mixture so that the texture is even crispier. Once cooked, the fried bananas can be immediately removed and served.
