In his video, Puguh not only teaches how to make Padang sauce, but also provides special tips on how to store the sauce so that it lasts longer.

First of all, prepare the spices such as shallots, garlic, cayenne pepper, large red chili, galangal, lemongrass, and candlenuts. These spices, both lemongrass and galangal, must be processed into fine spices, not just cut into pieces. The function is so that the Padang sauce will be thicker later.

"So the galangal and lemongrass are also ground, yes. It has to be really smooth because there are those two ingredients," said Puguh, quoted by BrilioFood from YouTube Puguh Kristanto Kitchen on Friday (4/10).

After that, heat the oil on a Teflon pan. When the oil is hot, pour in the ground spices. Stir briefly and cook over low heat until boiling. Then when it boils, immediately add the powdered spices one by one, namely sugar, salt, pepper, and flavoring.

Then add various sauces to make the Padang sauce taste even more delicious. You can use oyster sauce, tomato sauce, and chili sauce. After investigating, adding various sauces can also help thicken the Padang sauce later when it is cooked. Stir occasionally and wait until the oil comes out.

"Cook until the oil comes out, that's what will make it last," explained Puguh.

If the oil has come out, it means the stove can be turned off. If you want to store it, padang sauce can be cooled first before being put into an airtight jar. The storage method is also very simple, just put the padang sauce in the refrigerator chiller.

"Don't put it in the freezer, just put it in the refrigerator, it will last 2 weeks to 1 month," said Puguh.
