Material:
- 12 plantains, peeled, split according to taste
- 900 cc medium coconut milk
- 1/2 tsp salt
- 200 gr sugar
- 3 pandan leaves
- 1/4 tsp vanilla powder
- 250 gr rice flour
- 100 gr tapioca flour
- Purple, blue, green, yellow, orange and red dye to taste
How to make:
1. Boil coconut milk, pandan, sugar, salt and vanilla until boiling. Set aside and cool.
2. Gradually add the rice flour and tapioca to the mixture while stirring with a whisk until evenly mixed. Weigh out 235 ml of the mixture or divide 6 equally then add color to each.
3. Heat the steamer. Prepare a rectangular baking dish measuring 20x20x7. Brush with a little oil.
4. Pour the purple mixture first. Once the top surface is set or almost cooked, approximately 7-10 minutes. Arrange the steamed bananas, pour in the blue mixture again. Steam again and so on until the mixture is finished.
5. In the last layer, steam for 15-20 minutes. Let cool. Just cut into pieces.
