Adding yogurt or cream to a particularly spicy dish can reduce the heat for a number of chemical and physical reasons. Yogurt and cream contain fats that can dissolve capsaicin, the active compound in chili peppers that gives them their spicy flavor. The fat works by binding to the capsaicin molecules and helping to remove them from the taste receptors on your tongue, reducing the sensation of heat.

On the other hand, yogurt and cream have a cooling effect that can provide comfort to the tongue and mouth that are burned by spicy food. This effect helps soothe the irritation and burning sensation caused by capsaicin. Meanwhile, yogurt contains lactic acid which can help balance the taste and reduce the spiciness. Lactic acid can neutralize some of the effects of capsaicin, thereby reducing the overall spiciness of the dish.
