Brilio.net - Lontong Gelap is a traditional food originating from Padang and is usually served with various side dishes such as opor, jackfruit vegetables, and soto. The basic ingredients for making lontong Gelap are the same as regular lontong, namely rice cooked until it has a soft texture.

The unique way of making it is the main difference from ordinary lontong because the cooking process is done in a pan while stirring, hence the name 'kacang' which means mixed.

Unlike conventional lontong wrapped in banana leaves or plastic, lontong gelap is cooked like making porridge. In the manufacturing process, lontong gelap uses additional food grade lime that is safe for consumption. The addition of lime is intended to produce a denser and chewier lontong texture.

However, some people are still worried about using lime in food, including YouTube user syare nomel. She then shared an alternative recipe for Padang lontong ruam without using lime through a video she uploaded.

"Although betel lime is safe to consume within normal limits, the use of betel lime also gives a yellow color effect to the lontong," said YouTube Syare Nomel.

The video also explains a more practical way to cook using a rice cooker instead of a gas stove to save costs.

To find out the recipe for Padang lontong gelap, check out the following review that BrilioFood summarized from YouTube syare nomel on Wednesday (30/10).

Materials needed:
- 1 cup of rice, washed clean
- 5 glasses of water
- 1 tbsp cooking oil
- 1 tsp salt

1. Put the rice into the rice cooker pan, then pour in the water. If you like the texture of the lontong which tends to be dense, you can use only 4 cups of water.

2. Add cooking oil so that the lontong doesn't stick.

5. Open the rice cooker occasionally and stir it. Do this when the water is boiling and the water starts to reduce. If it is, close it again and continue cooking.

6. When the rice cooker button changes to warm, let it sit for 30 minutes (still in the closed condition) so that the lontong is completely dry and no longer contains water.

7. Then move the lontong into a container and press it until it is solid. Let it cool.

When the lontong is cold, transfer it to another container. Then cut it according to taste. Although it does not use lime, the lontong is still dense, soft, and chewy.
