To get a soft texture, rice vermicelli is usually boiled first before being fried or stir-fried with spices. However, this boiling can cause the rice vermicelli to become wet and soft, which makes fried rice vermicelli go stale quickly in a matter of hours.

After further investigation, the vermicelli that is to be processed does not have to be boiled. He admitted that it is enough to just soak the vermicelli. But not using hot water, soak the vermicelli in regular water (room temperature) for approximately 2 hours. According to him, hot water will only make the vermicelli become soft quickly because it is overcooked.

The soaking duration can also be adjusted to the amount of vermicelli. In the video, he soaked 500 grams of vermicelli. Therefore, the duration is quite long. If the amount of vermicelli is less than that, then the soaking duration can also be shortened. After soaking, remove and drain the vermicelli.

Next, prepare the spices in the form of 2 cloves of garlic and 2 cloves of shallots that have been pureed. Then saute the pureed spices in a little oil. After that, add the sliced spring onions, saute again until fragrant while stirring.

When it smells good, pour in enough water. Cook for a while and add flavoring. Stir again, then turn off the stove. After that, add the drained rice noodles. Stir until all ingredients are evenly mixed. Add enough pepper powder, and stir again until evenly mixed.

Next, prepare a steamer or steamer pan. Then heat the water in the steamer until it boils. Then move the rice noodles into the steamer. Cover the pan and steam the rice noodles for 5-10 minutes only.
