Unlike other fish, milkfish bones are more numerous and spread throughout its body, so it requires a special technique to clean it. However, if you don't have a pressure cooker at home, you can use the trick done by Instagram user @nikadewanti in processing milkfish. Through one of the videos uploaded, she admitted that she could make a more practical milkfish dish without having to clean the fine bones.

As reported by BrilioFood from Instagram @nikadewanti on Thursday (7/11), the method used is to blend the fish meat. Yup! This fish meat will be blended with its fine bones, so that the texture is smoother and easier to consume. To make it tastier, this milkfish meat is then mixed with other ingredients.

To be more precise, prepare milkfish whose guts and scales have been cleaned. Then pound the outside of the fish until the meat is crushed. If the inside is crushed, break the tailbone, then pull out the large bone in the middle of the fish from the head.

Next, scoop out the fish meat using a spoon. If necessary, you can flip the fish skin and scoop out the remaining meat that sticks to the skin. Now, immediately blend the fish meat with a little water to make it easier to crush, along with its fine bones.

Then add the spices, such as 90-100 grams of ground roasted coconut, 12 shallots, 8 garlic cloves, 1.5 tsp pepper, 3 tbsp coriander, 1/2 nutmeg, 3 tsp salt, 3 tsp granulated sugar, and 1 packet of seasoning. Stir all the ingredients until well blended.

Then take the milkfish skin that has been scooped out of meat. Then put in the processed fish meat that has been seasoned. You can use a piping bag so that the printed dough results are neater. If so, wrap each milkfish one by one using banana leaves.
