Material:
- 1 mackerel fish
- Soy sauce
- 1 lime
- 3 lime leaves
- 1 stalk crushed lemongrass
- 1/4 tsp ground pepper
- 1 tsp granulated sugar
- 1/2 tsp stock powder
- Oil for frying
Ground spices:
- 10 red chilies
- 6 red onions
- 3 cloves of garlic
- 3 candlenuts
- A thumb of ginger
- A piece of turmeric
Dabu-dabu chili sauce ingredients:
- 9 red onions
- 7 curly red chilies
- 7 red bird's eye chilies
- 7 yellow cayenne peppers
- 7 green bird's eye chilies
- 1 green tomato
- 1 red tomato
- Basil leaves to taste
- 1 lime
- 1/2 tsp salt
- 1/2 tsp granulated sugar
- 1 sachet of mushroom stock
- Coconut oil
How to make:
1. Coat the fish with lime juice, grind the spices then coat and marinate the fish.
2. After the spices are absorbed, grill the fish until cooked.
3. Mix all the chili ingredients together in a bowl.
4. Pour in heated coconut oil.
5. Drizzle dabu-dabu chili sauce over the grilled fish.
