Material:
- 1 duck, split in the middle and widen
- 1 lime
- 1/2 tbsp salt
- 90 ml thick coconut milk
Seasoning ingredient:
- 1 finely chopped galangal segment
- 1 segment of roasted turmeric, finely chopped
- 1 tsp coriander powder
- 1 tsp ground pepper
- 1 tsp ground nutmeg
- 1/4 tsp turmeric powder
- 10 red onions, finely sliced
- 2 stalks of lemongrass, take the white part, finely chop
- 2 pieces of ginger, finely chopped
- 2 galangal segments, roughly sliced and flattened
- 2 teaspoons of grilled shrimp paste
- 3 lime leaves, remove the middle bone and finely slice
- 5 large red chilies, seeds removed, finely sliced
- 5 curly red chilies, finely sliced - 5 orange bird's eye chilies, finely sliced
- 5 bay leaves, roughly torn - 5 cloves of garlic, finely sliced
- 8 roasted candlenuts, coarsely crushed
- Salt, sugar and stock powder to taste
How to make:
1. Prepare the duck, coat the surface with lime juice and salt.
2. Set the duck aside for 15 minutes, then wash it thoroughly.
3. Prepare a frying pan and heat the oil.
4. Add all the spice ingredients, stir-fry until fragrant and cooked.
5. Add salt, sugar, stock powder and other powders to taste.
6. Add the duck and coat the surface with the sauteed spices.
7. Cover the pan and cover over low heat until it changes color and the spices are absorbed.
8. Add 1/2 of the water and coconut milk mixture.
9. Stir until the coconut milk and spices are mixed evenly.
10. Close the pan tightly and cook until the water runs out.
11. Turn the duck over, add 1/2 of the remaining coconut milk.
12. Cover the pan and cook again until the water is gone and the duck is cooked.
13. Check the duck for doneness. The method is to prick and tear using a fork. If it is not cooked, add water and cook again.
14. For maximum results, bake briefly in the oven. Or it can also be grilled over coals and grilled on the stove.
15. Prepare a flat baking sheet, line the baking sheet with a sheet of aluminum foil, then place the duck on it.
16. Bake in the oven at 180 degrees Celsius for 15-20 minutes until the spices look dry.
17. Remove the duck from the oven.
