Bamboo shoots or young bamboo shoots are a popular ingredient in many Asian cuisines because of their crunchy texture and delicious taste . Bamboo shoots are also high in nutrients such as fiber, vitamins, and minerals. It is no wonder that bamboo shoots are known to be healthy, especially for diets.
Bamboo shoots can be processed into various dishes, from stir-fries, soups, to mixed salads. The uniqueness of its slightly sweet taste and distinctive texture makes bamboo shoots not only add to the deliciousness of the dish, but also provide interesting variations in the dish.
Because it is often used in various dishes, some people usually store bamboo shoots in large quantities as stock. Unfortunately, storing bamboo shoots carelessly can make this food ingredient rot easily in a matter of days. Well, to make it last longer, you can imitate the trick shared by a former Taiwanese migrant worker named Uni.
As reported by BrilioFood from YouTube Uni mama on Wednesday (7/8), she admitted to storing bamboo shoots by drying them. However, Uni did not use an oven or special tools to dry the bamboo shoots. She admitted to only relying on simple tools available at home.

The method is to boil the bamboo shoots first for 1.5 hours or until they are completely boiled. This duration can be adjusted to the portion of bamboo shoots to be stored. After boiling, soak the bamboo shoots overnight in boiled water.

If so, drain the bamboo shoots, cover with salt, and let sit for 4 hours. After adding salt, slice thinly. Only then transfer it into a large plastic bag. Then tie the plastic and pack it again in a sack.

Then ferment the bamboo shoots. To do this, place the wrapped bamboo shoots in an upside-down basin. Then crush it using several heavy brick blocks. This is done to suppress the remaining water in the bamboo shoots. For maximum results, ferment bamboo shoots for 2 nights.

After leaving it for 2 nights, open the sack and plastic packaging for the bamboo shoots. At this stage, the bamboo shoots will become rougher and drier. However, to make it drier, add more salt to the surface of the bamboo shoots and stir until evenly distributed.

Next, arrange the bamboo shoots on a tray or wide table that has been covered with plastic. After that, dry the bamboo shoots until dry for 5-6 hours. Well, dried bamboo shoots will taste softer. You can immediately pack it in plastic or a container and then store it in the refrigerator. "You can put it in the refrigerator, it won't rot for up to 1 year, friends," said YouTube Uni Mama.
