This meat is often considered the same as goat meat, but actually, goat meat and lamb are different, you know. Lamb meat has a softer texture than goat meat. Apart from that, lamb also has an aroma that is not as strong as goat meat, so lamb has a minimal prengus aroma. It's not surprising that many people prefer to process lamb meat rather than goat meat.

In fact, quite a few are willing to stock up on lamb at home. However, if it is not stored properly, lamb will usually turn tough. However, there is a trick to keep lamb tender while it is being processed. One of them uses papaya leaves.

Apparently, apart from papaya leaves, there are other tricks for storing lamb so that it doesn't get tough and remains delicious when processed, you know. This trick was shared by a man in an upload to the @mangkoboii account on Instagram. He shared tips for storing lamb after getting the sacrificial meat.

"Storing lamb for qurban is sometimes still an issue for those of us who rarely come across lamb, especially pieces from qurban," he wrote, quoted by BrilioFood from @mangkoboii, Thursday (21/6).

First, make sure your hands are hygienic so that no bacteria sticks to the lamb you are storing. After washing your hands, you can use plastic gloves so you don't come into direct contact with the meat.

Then, prepare the meat that you will store. If the lamb is dirty, clean the lamb first. However, do not wash lamb with water when storing it. Because, washing meat with water before storing has the potential to make the meat smell and reduce the juicy level of the meat. Apart from that, water also contains bacteria which will enter the meat over a long time.

To clean it, you can prepare a tissue, then wipe the dirty part of the meat with a tissue. Wipe evenly until the meat looks clean from dirt.

Then, before storing the meat, the man seemed to separate the meat from the innards. According to him, offal contains microbes, while meat is the substrate for microbes.

"Meat is a substrate for microbes, if the two are mixed, it will definitely rot," he said.

Then, how do you store it?

Prepare the lamb in whole pieces, or you can also just cut it according to your needs. However, avoid storing lamb that is already diced, such as when processing it into satay. Because, it has been handled a lot, so a lot of bacteria from the hands has spread.

After that, put the meat into a container such as a jar, then close it tightly. Likewise with the offal, put it in a jar and cover it.

Now, you can store the lamb meat. For storage, don't shock the lamb with drastic changes in temperature. So, put the lamb into the chiller first. After that, you can put it in the freezer. This method can be used to store lamb for a long time, up to months.

Likewise when processing meat. Usually people will immediately apply hot water to meat that has just been taken from the freezer. This will shock the meat with changes in temperature and cause the lamb to become tough.

So, the way to remove the meat from the freezer, and put it in the chiller first. After that, just leave it at room temperature for a while, then the meat is ready to be processed and will still be delicious.
