Material:
- 1 kg fresh snapper, clean and coat with lime
- 1 lime
- 1 bunch of basil
- 20 cayenne peppers
- Salt
- Sugar
- Pepper to taste
- 2 stalks of lemongrass, crushed
- 2 bay leaves
- 4 lime leaves
- Enough oil for frying
Ground spices:
- 9 cloves of shallots
- 7 cloves of garlic
- 3 segments of turmeric
- 1 segment of ginger
- 3 candlenuts
Papada ingredients:
- 200 gr farmer's sago flour
- 4 glasses of water
- 1 slice of lime
How to make:
1. Saute the spices and accessories, add water and chilies, wait until it boils.
2. After boiling, squeeze 1 lime, add the fish.
3. Add sugar, salt and pepper to taste, at the end add basil.
4. To make papeda, cook 3 glasses of water until it boils.
5. Set aside 1 glass of water mixed with sago flour, stir until everything is mixed.
6. Add the flour solution to hot water, add lime and stir quickly until it resembles glue.
7. Mix the papeda with the snapper sauce while it is warm.
