Brilio.net - Surabaya's typical kelopo satay is made from beef which contains a lot of fat. It's not wrong, if this snack is different from satay in general. How could it not be, the mixture of grated coconut in it makes this dish taste delicious. To make it more filling, kelopo satay can be served with pieces of rice cake. Material:
- 500 gr fatty beef, cut into 1 cm cubes
- 100 gr half old grated coconut
- skewers - cooking oil, to taste
Ground spices:
- 12 red onions
- 5 cloves of garlic
- 2 cm turmeric
- 1 tsp coriander
- 2 cm galangal
- 2 cm ginger
- 3/4 tsp cumin
- 1/2 tsp salt
- 1 tsp granulated sugar
- 3 tablespoons cooking oil
Spread, stir together:
- 2 tablespoons sweet soy sauce
- 2 tablespoons cooking oil
Peanut sauce seasoning:
- 150 gr fried peanuts, puree
- 250 ml hot water
- 4 cloves garlic
- 4 red chilies
- 1 tablespoon brown sugar
- 1 tsp salt
- 4 tablespoons cooking oil
Complementary:
- fried onions
- sweet soy sauce
- lime
- rice cake
How to make:
1. Sushi rice: Put the rice ingredients into the rice cooker, stir well. Press the cook button, wait until cooked.
2. Filling: Heat cooking oil, saute the garlic and onion until fragrant. Add beef stock, Worcestershire, salt and pepper. Bring to a boil, remove the onion.
3. Add the meat, cook until both sides are cooked, remove from heat.
4. Divide the sushi rice into 8 parts, shape each part into a flat square 10 x 10 cm. Spread 4 square surfaces of rice with mayonnaise and chili sauce.
5. Place a sheet of lettuce, 1 burger with onions, and a sheet of cheese.
6. Cover with 1 square piece of rice and a sheet of nori. Serve immediately.
