Material:
- 1 duck, cut according to taste
- 5 kaffir lime leaves
- 3 bay leaves
- 2 stalks lemongrass, bruised
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 2 tablespoons tamarind water
- 1 liter of water
Ground spices:
- 10 red onions
- 7 cloves of garlic
- 4 curly red chilies
- 7 candlenuts
- A thumb of young galangal
- A thumb of ginger
- 3 cm turmeric
- 2 tsp salt
- Powdered mushroom broth according to taste
- 2 tsp coriander, roasted
- 1 tsp pepper, roasted
- Right amount of oil
Additional ingredients:
- Green cayenne pepper
How to make:
1. Clean the duck, then squeeze the lime and rub with salt then let it rest in the refrigerator for 30 minutes.
2. Saute ground spices without additional chilies in oil until fragrant, add the duck to the pan and add bay leaves, lime leaves, lemongrass, tamarind, brown sugar, pour water until the duck is submerged.
3. Cook the duck over low heat until the duck is tender while adjusting the taste. Once the duck is tender, remove from heat and set aside.
4. Continue cooking the spices and add the additional ground cayenne pepper.
